Seattle's Late-Night Ramen

Broth Simmered past midnight,
Served Before it fades.

Every bowl at Midnite Ramen begins with 18 hours of patience — pork bones, dashi, and aromatics reduced to a depth you won't find anywhere else in Seattle.

Our Story

We don't rush the broth.

Midnite Ramen was born from a simple conviction: that a bowl of ramen should taste like someone cared about every ingredient. Not as a trend, not as a shortcut — as a discipline.

Our kitchen opens before dawn. The pork bones go in first, then the aromatics, then time — 18 hours minimum for our tonkotsu, longer for our paitan. We make our noodles in-house three times a week. Our chashu is braised, not seared, and our soft-boiled eggs sit in a soy-mirin bath for exactly 12 hours.

We're in West Seattle because this is where we live. We stay open late because the people who work nights deserve a bowl that tastes like it was made for them.
